Trail Running Recipe Date Carb Loading Brownies Makes 18 Pieces 126 Cal/ Piece
Perfect for the day before Ultra Running or Trail Running.
1 1/4 Cup of Pitted Dates
1 Cup of Water For the Dates
1 Cup of Good Quality Cocoa Powder
3/4 Cup of Boiling Water For the Cocoa Powder
1 tsp of Baking Powder
1/2 Cup of Butter or Margarine
2 Large Eggs
1 tsp of Vanilla
2 Tsp of Maple Syrup
1 1/3 Cup of Oats Ground in your blender. Oat Meal Can be used also.
1/4 tsp of Salt
1/2 Cup of Walnuts Chopped Optional
1/2 Cup of Dark Choc Chips Optional
Preheat the Oven on 180C
Grease a 22cm Cake Tin.
In a saucepan bring 1 cup of Water to the boil. Add the Pitted Dates and boil on medium heat until water has reduced and Dates have softened. About 5 minutes.
In a bowl combine Cocoa Powder and Baking Powder in a large bowl.
Boil 3/4 Cup of water in a Kettle and add to Cocoa Powder Mixture.
In the meantime when Water and Dates have been combined into a caramel, add Butter and stir until combined with the Dates.
Place mixture into a blender and pulse until mixture has turned into a smooth caramel.
Pour Date caramel into the bowl with the Cocoa mixture and combine. The Mixture should be smooth.
Add Maple Syrup and Vanilla to mixture and combine.
Stir in Eggs, add in ground Oats and Salt.
Finally stir in Walnuts and Choc Chips and combine.
Pour into a 22cm Cake tin and Bake for 15-20 minutes until the top of the cake cracks slightly or until a skewer test come out clean.
Rest until cooled and dust with icing sugar if desired.
Cut into 2cm by 5cm Rectangles
