2 Egg Whites (When I’m not pre-event dieting I allow 1 egg Yoke) 3/4! Cup of Frozen Peas
1 Cup of Water Boiled to defrost the Peas
90g Pumpkin sliced
3 Medium Mushrooms sliced 65ml! Lite Coconut Milk
1 Tsp Canola Oil
3/4 Cup of Cabbage Sliced
1 tsp of Coriander Chopped
1 tsp of Curry Powder
(I just use Keen’s Curry Powder, Mikey my husband disapproves…..You can find a better Curry Powder if you wish:)
Place Peas in a bowl and our boiling Water over them to de-frost.
In a medium non stick fry pan add Canola oil and heat pan. Add pumpkin and brown on a medium heat turn over to brown under side and add mushrooms and cook until golden.
Strain Peas and add to the fry pan. Add Curry Powder and stir until combined. Add Lite Coconut Milk and mix.
Add Egg Whites and increase the heat to high and work the mixture until the Lite Coconut has reduced and the Egg White are cooked.
In a bowl add the Chopped Cabbage then pour your Stir Fry on top.
Garnish with Coriander.
I eat this meal for lunch most days. It keeps me nice and lean.
